Ingredients

  • 1 bagel
  • Cream cheese, to taste
  • 100 g smoked or cured salmon
  • ½ ripe avocado
  • 2 eggs
  • Salt and freshly ground black pepper, to taste
  • A drizzle of olive oil, to finish
  • A few drops of lemon juice
  • Mixed salad leaves, to serve

Method

Toast the bagel lightly if you prefer it warm, then slice it in half lengthways.

Spread cream cheese over the cut side of one half and arrange the salmon on top.

Slice the avocado and place it on the other half, or over the salmon for an open bagel. Add a few drops of lemon juice.

Season with salt and freshly ground black pepper.

Fry or scramble the eggs, or make a simple omelette.

Serve the bagel with the eggs and mixed salad leaves. Finish with a drizzle of olive oil.
