The Secret to Pan-Fried Chicken in a Stainless Steel Pan

Learn to manage heat, let a golden crust develop and turn chicken with confidence in a stainless steel frying pan.

Cooking can be more than a daily task. The smells, sounds and warmth of the kitchen can be an invitation to slow down and enjoy a little quality time. Learning to give chicken a golden surface while keeping the inside tender is one of those small achievements that makes the process more rewarding.

Why stainless steel makes a difference

A pan that distributes heat evenly helps you manage the sear. The Tramontina Grano 3-Ply Stainless Steel Frying Pan combines stainless steel and aluminium for even heat distribution. This Grano model has a stainless steel handle, so do not assume it stays cool.

Use tongs to position and turn the chicken without piercing it. Organising your seasoning and a chopping board before you start helps the cooking flow more smoothly.

Let the crust develop

Chicken can initially stick to an uncoated stainless steel surface. As the crust forms, it becomes easier to release and turn. Give it time rather than forcing it away from the pan. Follow the pan care instructions for heat management; the UK Grano guidance says high heat is unnecessary.

Finish it your way

Olive oil, lemon and herbs bring aroma and freshness to the finished chicken. Keep them ready for serving, with an oil dispenser if you have one, and choose dinnerware that makes even a simple meal feel considered. A golden crust, attention to the process and time to enjoy the meal are all part of the experience.

Check the chicken is cooked through

Browning and natural release are cooking cues, not food-safety checks. Follow UK cooking guidance: the centre of the chicken should reach 70°C for 2 minutes, or an equivalent safe time and temperature combination, checked with a clean food thermometer.

Ingredients

  • Chicken, quantity and cut as required
  • Seasonings of your choice
  • Cooking oil, for the pan
  • Olive oil, optional, to finish
  • Lemon, optional, to finish
  • Herbs, optional, to finish

Method

Preparation:

Arrange your seasoning on the worktop and prepare the chicken on a chopping board before you start.

Preheating:

Heat the stainless steel frying pan in accordance with its care instructions. Use a few drops of water to check for the Leidenfrost effect: the droplets move across the surface rather than evaporating immediately. Do not use this test on a non-stick pan or overheat the pan.

After the water-drop test, lower the heat and wait about 2 minutes before adding the oil, to help avoid white smoke. Follow the UK Grano care guidance, which recommends low heat and says high heat is unnecessary.

Searing:

Use tongs to place the chicken in the pan without piercing the meat. Leave it to brown. It may initially stick; as the crust forms, it should release more easily. Turn it once it releases naturally rather than forcing it away from the surface.

Continue cooking the other side until the chicken is thoroughly cooked. Check the centre with a clean food thermometer: 70°C for 2 minutes, or an equivalent safe time and temperature combination, following UK guidance. Natural release and colour alone do not confirm it is cooked through.

Resting and serving:

Move the cooked chicken to a clean chopping board and leave it to rest briefly before slicing.

Finish with olive oil, lemon or herbs as you prefer, using an oil dispenser if helpful. Serve on your favourite dinnerware and enjoy the meal.
