Homemade Burger with Corn Ribs

Ingredients
- For the burgers
- 600g minced beef with approximately 20% fat
- 100g cheddar
- 3 brioche burger buns
- 50g butter
- Salt and black pepper, to taste
- For the corn ribs
- 2 pre-cooked corn cobs
- 50g butter
- 50g grated Parmesan
- Smoked paprika and lemon pepper, to taste
- Lemon juice, salt and black pepper, to taste
Method
- Carefully cut each corn cob lengthways into rib-shaped strips.
- Mix the butter with smoked paprika, lemon pepper, salt and black pepper, then brush over the corn. Grill until golden, curved and crisp. Finish with Parmesan and lemon juice.
- Divide the beef into three 200g portions and shape into patties.
- Butter the brioche buns and toast the cut sides briefly on the grill.
- Grill the burgers, seasoning with salt and pepper. Add the cheddar near the end so it melts.
- Assemble the burgers in the toasted buns and serve immediately with the corn ribs.
