Barbecued Pork Fillet with Blackberry Glaze

Juicy barbecued pork fillet meets a glossy blackberry glaze with honey, soy and balsamic vinegar in this easy sweet-and-sour centrepiece.

Bring something a little different to the barbecue with juicy pork fillet and a glossy blackberry glaze. The fruit adds brightness and gentle sweetness, balanced by soy sauce, balsamic vinegar and lemon.

Slice the pork after a short rest and spoon over the warm glaze just before serving for a simple centrepiece with plenty of colour and flavour.

Ingredients

  • 1 pork fillet, approximately 1kg
  • Fine salt and freshly ground black pepper, to taste
  • 200g blackberries
  • 50g honey
  • 50ml soy sauce
  • 50ml balsamic vinegar
  • 30ml lemon juice

Method

  1. Season the pork fillet with salt and black pepper.
  2. Cook it on a hot barbecue, turning regularly, until evenly browned and cooked through.
  3. Meanwhile, add the blackberries, honey, soy sauce, balsamic vinegar and lemon juice to a frying pan suitable for the barbecue.
  4. Simmer gently, crushing some of the blackberries, until the sauce becomes thick and glossy.
  5. Rest the pork for a few minutes, then slice it.
  6. Spoon over the warm blackberry glaze and serve.
