Lime Cake with Lemon and Lime Zest

Ingredients

  • 3 eggs
  • 2 cups granulated sugar (about 400g)
  • 1 cup corn oil (about 240ml)
  • 200ml milk
  • 3 cups plain flour (about 360g)
  • 1 tbsp baking powder
  • Juice of 1 lime
  • Zest of 1 lemon
  • Zest of 1 lime

Method

Prepare the batter:

Blend the eggs, sugar and corn oil until smooth. Add the milk and plain flour a little at a time, mixing just until combined. Transfer to a bowl and gently stir in the baking powder, lime juice, lemon zest and lime zest.

Bake:

Preheat the oven to 170°C. Pour the batter into a greased cake tin and bake for about 30 minutes, or until the cake is baked through. Leave to cool before removing it from the tin and slicing.
