Chicken Salad with Yoghurt Dressing and Croutons

Ingredients

  • 250g chicken breast, diced
  • 150g iceberg lettuce
  • 1 cucumber, sliced
  • 2 slices of bread
  • 5 cherry tomatoes, halved
  • A little olive oil, for cooking and croutons
  • Salt and black pepper, to taste
  • 1 cup plain yoghurt (about 240ml)
  • 3 tbsp olive oil, for the dressing
  • 1 tbsp lemon juice
  • A pinch of salt, for the dressing

Method

Cook the chicken:

Heat a little olive oil in a non-stick frying pan over a medium-high heat. Add the cubed chicken and cook, stirring, for about 8 minutes or until browned and thoroughly cooked with no pink remaining. Season with salt and black pepper.

Make the croutons:

Remove the crusts from the bread and cut it into small cubes. Drizzle with a little olive oil, place on a baking tray and bake in a preheated oven for about 6 minutes, until golden and crisp.

Mix the dressing:

Stir together the plain yoghurt, 3 tbsp olive oil, lemon juice and a pinch of salt until smooth.

Assemble:

Arrange the lettuce, cucumber and cherry tomatoes in a serving bowl. Add the warm chicken and croutons, spoon over the dressing and serve straight away.
