Tender prawns in a creamy passion fruit sauce with garlic, onion and a glossy butter finish — a quick sweet-and-savoury dish for four.
Sweet, tangy passion fruit brings a bright contrast to this creamy prawn dish. With garlic, onion and a little butter to finish the sauce, it turns a short list of ingredients into a colourful main course.
Ready in around 25 minutes, this is a practical recipe for a midweek dinner or a relaxed meal with friends. A wide frying pan gives the prawns room to cook evenly, while Tramontina dinnerware provides an easy way to bring the finished dish to the table.
Use raw peeled prawns and cook them until pink, opaque and thoroughly cooked before serving.
1. Heat the olive oil in a wide frying pan over a medium heat. Add the onion and garlic and cook until softened and lightly golden.
2. Add the prawns and cook until they turn pink and opaque.
3. Stir in the passion fruit pulp and double cream, then season with salt and black pepper.
4. Cook for a further 5 minutes, stirring gently.
5. Remove from the heat and stir through the butter for a glossy finish. Garnish with fresh herbs or salad leaves and serve immediately.
