Ingredients

  • 400 g raw peeled prawns
  • 120 ml passion fruit pulp
  • 1 onion, finely chopped
  • 2 garlic cloves, finely chopped
  • 80 ml double cream
  • 2 tbsp olive oil
  • 20 g butter
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • Fresh herbs or salad leaves, to garnish

Method

Heat the olive oil in a wide frying pan over a medium heat. Add the onion and garlic and cook until softened and lightly golden.

Add the prawns and cook until they turn pink and opaque.

Stir in the passion fruit pulp and double cream, then season with salt and black pepper.

Cook for a further 5 minutes, stirring gently.

Remove from the heat and stir through the butter for a glossy finish. Garnish with fresh herbs or salad leaves and serve immediately.
